Champagne mojito

This twist on the classic rum and mint cocktail adds an extra layer of flavor and makes it feel that bit special. Fresh and perfect for sipping.

Ingredients

  • 6 mint leaves
  • ¾ fl oz lime juice
  • ½ fl oz simple syrup (1 part water, 1 part sugar)
  • 1 ½ fl oz white rum
  • 3 fl oz champagne approx (or other sparkling wine)

  1. Put the mint leaves, lime juice and simple syrup in the bottom of a tall (Collins) glass. Muddle them together to bruise the mint and release their oils.
  2. Add some ice and the rum and gently stir. Top up the glass with champagne.

Notes

  • To make a larger batch for around 8 glasses - muddle approx 50 mint leaves (just the leaves, not on stems), 6oz (180ml) lime juice and 4oz (120ml) simple syrup in a jug. Add 12oz (360ml) rum and stir. Chill this mixture until needed (ideally no more than a couple hours so the mint doesn't wilt too much) Divide this base mixture between 8 glasses, each with a few pieces of ice. Top up the glasses with champagne (should use roughly the whole bottle).
