Champagne Vinaigrette

Champagne vinaigrette combines champagne vinegar, olive oil, Dijon mustard, shallots, garlic, and honey to create a balanced dressing. The blend produces a smooth, tangy, and slightly sweet vinaigrette with fine sea salt and black pepper enhancing the flavor. Adding water helps achieve a lighter texture without extra oil. It’s a versatile dressing suitable for salads that benefit from a refined acidic touch layered with a mild sweetness.

Ingredients

  • 3 tablespoons champagne vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 tablespoon shallot finely chopped
  • 1 clove garlic , minced
  • 3 tablespoons honey
  • 1/2 teaspoon salt fine sea salt
  • 1/4 teaspoon black pepper ground

Instructions

    Cup of Yum
  1. Add the vinegar, oil, mustard, shallot, garlic, honey, salt, and pepper to a blender. Add 1 tablespoon of water, as well, to help thin-out the dressing, without using additional oil. (This improves the flavor!)
  2. Blend until the dressing is smooth, and then adjust any seasoning to taste. You can add an additional 1 tablespoon of water, to help thin the texture even more, and you can add a splash of vinegar (or lemon juice) for more of a tangy flavor, or more honey for a sweeter taste.
  3. Transfer the dressing to an airtight container and store it in the fridge until you're ready to use it. This dressing will keep well in the fridge for up to a week. If the dressing thickens when it's chilled, let it come back to room temperature by setting it on the counter for 30 minutes, or you can run the sealed jar under warm running water, until it's runny in consistency again. It's normal for dressing to separate in the fridge, so shake well before each use.

Notes

  • The dressing keeps well in the fridge for up to a week when stored airtight.
  • If the vinaigrette thickens or separates after chilling, allow it to return to room temperature or warm the container under warm water before using.
  • Adjust the seasoning by adding more vinegar for tang or honey for sweetness according to taste.
