Champagne Vinaigrette
Description
The Champagne Vinaigrette recipe brings together champagne vinegar, extra-virgin olive oil, Dijon mustard, finely chopped shallots, and minced garlic with honey to lend subtle sweetness. The mixture is blended to a smooth consistency, with adjustments made via water or additional honey or vinegar to modify tanginess and sweetness as preferred. This vinaigrette has a balanced, slightly sharp acidity tempered by the honey and mustard and is seasoned simply with fine sea salt and black pepper. It’s designed as a refined dressing for green salads or vegetable dishes, imparting a delicate but distinct flavor profile. The vinaigrette can be stored refrigerated for up to one week, and will separate naturally, so shaking or warming it before use helps restore texture.
Ingredients
- 3 tablespoons champagne vinegar
- 1/3 cup extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 tablespoon shallot finely chopped
- 1 clove garlic , minced
- 3 tablespoons honey
- 1/2 teaspoon salt fine sea salt
- 1/4 teaspoon black pepper ground
Instructions
- Add the vinegar, oil, mustard, shallot, garlic, honey, salt, and pepper to a blender. Add 1 tablespoon of water, as well, to help thin-out the dressing, without using additional oil. (This improves the flavor!)
- Blend until the dressing is smooth, and then adjust any seasoning to taste. You can add an additional 1 tablespoon of water, to help thin the texture even more, and you can add a splash of vinegar (or lemon juice) for more of a tangy flavor, or more honey for a sweeter taste.
- Transfer the dressing to an airtight container and store it in the fridge until you're ready to use it. This dressing will keep well in the fridge for up to a week. If the dressing thickens when it's chilled, let it come back to room temperature by setting it on the counter for 30 minutes, or you can run the sealed jar under warm running water, until it's runny in consistency again. It's normal for dressing to separate in the fridge, so shake well before each use.

- The dressing keeps well in the fridge for up to a week when stored airtight.
- If the vinaigrette thickens or separates after chilling, allow it to return to room temperature or warm the container under warm water before using.
- Adjust the seasoning by adding more vinegar for tang or honey for sweetness according to taste.
