Ingredients

  • 1 shallot minced
  • 2 ounces butter divided
  • 2 ounces white wine
  • 1 cup demi glace
  • 1 tablespoon Dijon mustard
  • 4 cornichons diced
  • ½ teaspoon fresh lemon juice
  • salt & pepper to taste

Instructions

  1. Sauté the shallot in the butter until translucent.
  2. Add the white wine and reduce to a syrupy consistency.
  3. Add the demi glace, stir and reduce until the sauce is thick enough to coat the back of a spoon.
  4. Stir in the mustard, cornichons, and lemon juice.
  5. Whisk in the remaining ounce of butter.
  6. Season with salt and pepper.
