Cheese and Egg Toast

Ingredients

  • 4 eggs
  • 1 cup cheddar cheese grated
  • ½ cup feta cheese or ricotta or goat cheese
  • 4 tablespoons butter
  • 8 lices of bread
  • pinch of salt & pepper

  1. Preheat broiler to medium (450 F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the eggs, then stir in the cheddar, feta, 1/2 teaspoon of salt, and a few cracks of black pepper until well combined.
  3. Spread some butter on each slice of bread and top with the egg mixture, spreading it evenly to the edges.
  4. Broil for 7-10 minutes, or until golden brown. Towards the end, watch closely, so they don't burn.

  • For the best results, I like to use firm, fresh bread like baguette, sourdough, rye, or ciabatta.
  • Make sure to whisk the eggs well before adding the cheese - this helps create a smooth, even texture in the topping.
  • Don’t overload the bread with too much egg mixture. I spread a generous but even layer to avoid spilling over as it cooks.
  • Keep a close eye while broiling. The cheese can go from golden to burnt quickly - check at the 7-minute mark and monitor closely.
  • You can also bake a smaller batch in your toaster oven.
  • Let the toast cool for a minute or two before serving - it helps the topping set and makes it easier to eat.
