Ingredients
- 4 eggs
- 1 cup cheddar cheese grated
- ½ cup feta cheese or ricotta or goat cheese
- 4 tablespoons butter
- 8 lices of bread
- pinch of salt & pepper
Instructions
- Preheat broiler to medium (450 F) and line a baking sheet with parchment paper.
- In a large bowl, whisk the eggs, then stir in the cheddar, feta, 1/2 teaspoon of salt, and a few cracks of black pepper until well combined.
- Spread some butter on each slice of bread and top with the egg mixture, spreading it evenly to the edges.
- Broil for 7-10 minutes, or until golden brown. Towards the end, watch closely, so they don't burn.
