  • 4 eggs
  • 1 cup cheddar cheese grated
  • ½ cup feta cheese or ricotta or goat cheese
  • 4 tablespoons butter
  • 8 lices of bread
  • pinch of salt & pepper

Instructions

  1. Preheat broiler to medium (450 F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the eggs, then stir in the cheddar, feta, 1/2 teaspoon of salt, and a few cracks of black pepper until well combined.
  3. Spread some butter on each slice of bread and top with the egg mixture, spreading it evenly to the edges.
  4. Broil for 7-10 minutes, or until golden brown. Towards the end, watch closely, so they don't burn.
