Cheese-stuffed mashed potato casserole

Ingredients

  • 8 cups mashed potatoes (This recipe is great for leftovers and can be scaled up or down depending on how much mashed potatoes you have)
  • 2 cups grated cheese (Fontina, Raclette, Mozzarella, Cheddar, etc)
  • 2 cups panko breadcrumbs
  • 2 tbsp olive oil
  • 2 garlic cloves crushed
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Make the mashed potatoes according to recipe instructions. 
  2. Layer half of the mashed potatoes in a casserole dish.
  3. Top with the cheese and add the rest of the mashed potatoes. In a small bowl, combine the breadcrumbs, garlic, salt, pepper and olive oil.
  4. Top the mashed potatoes with the breadcrumbs. 
  5. Place the mashed potato casserole in a preheated oven and bake for 15-20 minutes or until the top is golden brown and the casserole is hot and bubbling.
  6. Remove from the oven, allow to cool for 5 minutes then serve scattered with chopped parsley.
