Cheeseburger Breakfast Casserole

Ingredients
- 12 eggs
- 1/2 lb ground beef
- 1/2 white onion diced
- salt and pepper
- 1 1/2 cups cheddar cheese
- 1 tbsp avocado oil
- Spray avocado oil
Instructions
- Preheat oven to 400F
- Pour avocado oil into a frying pan over medium-low heat
- Add diced white onion to the pan and cook until soft and fragrant - about 3 minutes
- Add 1/2 lb of ground beef to the pan, increase the heat to medium
- Break the beef up into crumbles and season with salt and pepper
- Continue cooking the beef and breaking up with a spatula until brown and crumbled
- Remove the pan from the heat and set aside
- Spray a 13x9 baking dish with avocado oil
- Crack 12 eggs into the greased baking dish and whisk them together until fluffy
- Pour beef and onion mixture into the baking dish with a spoon
- Season with salt and pepper
- Sprinkle cheddar cheese all over the top of the dish
- Bake in the oven at 400F for 30 minutes
- Remove from the oven and cut into 12 individual squares
