Cheesy Asparagus Gratin

A 5-min appetizer (or side dish)! Simply roast your asparagus with desired herbs, top with cheese and bake until cheesy goodness!

Ingredients

  • 2 pounds asparagus trimmed
  • ¼ cup unsalted butter melted
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • Kosher salt and freshly ground black pepper to taste
  • 4 ounces Brie cheese thinly sliced
  • 1 cup shredded Mozzarella cheese
  • 2 tablespoons chopped fresh parsley leaves

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place asparagus in a single layer onto the prepared baking sheet. Stir in butter, garlic and Italian seasoning; season with salt and pepper, to taste.
  3. Place into oven and roast for 8-10 minutes, or until tender but crisp. Top with cheeses and bake for an additional 3-4 minutes, or until melted.
  4. Serve immediately, garnished with parsley, if desired.
