Cheesy Bacon Ranch Hash Brown Casserole Recipe

This creamy, cheesy hash brown potato casserole that has been served at family gatherings, potlucks, funerals, and church suppers for generations.

Ingredients

CREAM OF CHICKEN SOUP SUBSTITUTE
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 onion , chopped
  • 1-1/2 cups chicken broth (I use the no salt added )
  • 1 cup milk (I use 1%)
SEASONINGS
  • salt and pepper to taste
  • 1 package ranch seasoning mix
  • 2 teaspoons Worcestershire
  • 1 dash hot sauce (adjust to taste)
  • 6 lices cooked bacon , chopped
TRADITIONAL HASH BROWN CASSEROLE
  • 1 cup sour cream (I use light sour cream)
  • 2 cups sharp cheddar shredded
  • 1 ounce bag frozen hash brown potatoes thawed
  • 2 tablespoons butter melted
  • 2 cups Panko bread crumbs

Instructions

  1. Preheat oven to 350 degrees.
  2. On top of the stove, in a large sauce pan over medium low heat, melt 3 tablespoons of butter.
  3. Add chopped onions and cook until they are soft, about 5 minutes.
  4. Stir in 1/4 cup flour and continue stirring for about 1 minutes until you have a paste.
  5. Pour in 1-1/2 cups chicken broth. Add in salt, pepper, ranch seasoning, worcestershire, and hot sauce. Continue stirring.
  6. Stir in milk and continue stirring. Let it simmer for about 5 - 7 minutes until slightly thickened.
  7. Remove from heat and add sour cream and cheese and stir until smooth.
  8. Add chopped bacon and fold in the thawed hash brown potatoes. Stir until all ingredients are evenly distributed throughout the mixture.
  9. Spoon the potato mixture into a 9 x 13 baking dish that has been sprayed with cooking spray.
  10. Sprinkle the bread crumbs evenly over the top of the casserole. Drizzle melted butter over the top of the bread crumbs.
  11. Bake at 350 degrees for about 1 hour.
  12. Remove from oven and let cool for about 10 minutes. Garnish with chopped bacon and green onions, if desired.
