Ingredients

  • 1 pound asparagus; woody ends cut off
  • 2 Tablespoons olive oil
  • 1/2 Tablespoon minced garlic 
  • 1/4 teaspoon fresh cracked black pepper
  • 1 1/2 cups shredded Mozzarella cheese
  • 6 oz. prosciutto thinly sliced

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Then, line a baking sheet with aluminum foil and lightly grease it with nonstick cooking oil.
  2. Wrap a slice of prosciutto around each asparagus spear.
  3. In a small bowl, mix together the olive oil, garlic, and pepper. Drizzle the mixture over the wrapped asparagus and toss to coat evenly.
  4. Bake for 10-12 minutes until the asparagus starts to become tender.
  5. Take the baking sheet out of the oven, move the asparagus spears close together to minimize gaps, and top them with the mozzarella cheese. Place the baking sheet back in the oven for 4-5 minutes or until the cheese melts and slightly toasted.
