Cheesy Baked Tortellini

A simple homemade Tomato Sauce makes this Easy Cheesy Baked Tortellini Casserole, a new Family Favorite Pasta dish.

Ingredients

FOR THE SAUCE
  • 2 tablespoons olive oil (27 grams)
  • 1 clove garlic minced
  • 1 1/2 cups tomato puree (passata)
  • 1 1/2 cups water
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
FOR THE TOPPING
  • 1 cup grated firm Mozzarella
  • 1/4 cup freshly grated Parmesan cheese
  • 1 pound fresh Tortellini (I used meat filling)

  1. In a medium to large oven proof baking dish add the olive oil, garlic, puree, water, and spices, bring to a boil then simmer (half covered) for approximately 15-20 or until thickened. Stirring occasionally.
  2. While sauce is cooking boil water, add salt and cook tortellini al dente. Drain
  3. Add the tortellini to the cooked sauce and gently combine. Top with grated Mozzarella and sprinkle with Parmesan cheese. Place under the broiler for approximately 2-3 minutes or until cheese melts and top is golden. Let sit 2-3 minutes and serve. Enjoy!

Notes

  • Any leftovers should be stored in an airtight container and refrigerated. It will keep for up to 3-5 days.
