Cheesy Baked Tortellini

A simple homemade Tomato Sauce makes this Easy Cheesy Baked Tortellini Casserole, a new Family Favorite Pasta dish.

Ingredients
FOR THE SAUCE
- 2 tablespoons olive oil (27 grams)
- 1 clove garlic minced
- 1 1/2 cups tomato puree (passata)
- 1 1/2 cups water
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon salt
FOR THE TOPPING
- 1 cup grated firm Mozzarella
- 1/4 cup freshly grated Parmesan cheese
- 1 pound fresh Tortellini (I used meat filling)

Instructions
- In a medium to large oven proof baking dish add the olive oil, garlic, puree, water, and spices, bring to a boil then simmer (half covered) for approximately 15-20 or until thickened. Stirring occasionally.
- While sauce is cooking boil water, add salt and cook tortellini al dente. Drain
- Add the tortellini to the cooked sauce and gently combine. Top with grated Mozzarella and sprinkle with Parmesan cheese. Place under the broiler for approximately 2-3 minutes or until cheese melts and top is golden. Let sit 2-3 minutes and serve. Enjoy!
Notes
- Any leftovers should be stored in an airtight container and refrigerated. It will keep for up to 3-5 days.
