Cheesy Garlic Zucchini Fritters

Cheesy Garlic Zucchini Fritters use grated zucchini mixed with egg, onion, flour, shredded mozzarella, garlic, and herbs to create small savory pancakes. Fried in batches until golden brown on both sides, these fritters have a crisp exterior and tender interior with subtle garlic and basil notes. Optional cayenne pepper adds mild heat, making them great as a snack or side dish alongside marinara sauce or sour cream.

Ingredients

  • 4 medium zucchini
  • 2 large egg
  • 1/4 cup onion white, minced
  • 1/2 cup all-purpose flour
  • 1/2 cup mozzarella cheese finely shredded
  • 1 teaspoon garlic minced
  • 1/2 teaspoon basil dried
  • 1/4 teaspoon cayenne pepper optional
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable oil divided use

  1. Use a cheese grater to grate 4 medium zucchini until you have about 3 cups of grated zucchini and place it into a medium-sized mixing bowl.
  2. Lightly beat 2 large eggs and add to the zucchini along with 1/4 cup minced white onion, 1/2 cup all-purpose flour, 1/2 cup finely shredded mozzarella cheese, 1 teaspoon minced garlic, 1/2 teaspoon dried basil, 1/4 teaspoon cayenne pepper (if using), and 1/4 teaspoon saltStir well enough to distribute ingredients evenly.
  3. Get a large heavy skillet heating over medium-high heat. Pour about 1 tablespoon of vegetable oil into the pan to coat.
  4. Making batches of 3 to 4 at a time drop heaping spoonfuls of the zucchini mixture into the hot oil in the pan. Use a spatula to press down a little to flatten it slightly, creating a pancake.
  5. Cook for 2 to 3 minutes, until golden brown before flipping. Cook an additional 2 to 3 minutes until both sides are golden brown.
  6. Once browned, transfer to a paper towel-lined plate to drain.
  7. Add 1 tablespoon additional vegetable oil in between each batch of 3 to 4. Continue cooking until all of the zucchini batter is used.
  8. Serve hot plain, topped with sour cream, or with marinara for dipping.

Notes

  • Incorporate cayenne pepper for a mild spicy note if desired.
  • Serve with marinara sauce or sour cream to complement the fritters' garlic and basil flavors.
