- 5 strips Bacon cut into bite-sized pieces
- 1/2 large onion diced
- 1 cup carrots diced
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 1/2 cups water
- 2 1/2 cups potatoes diced
- 1 can whole kernel corn
- 2 teaspoons chicken bouillon
- 1/4 teaspoon ground white pepper
- 3 cups shredded cheddar cheese
- 2 cups fully cooked ham slices cut into small pieces
Instructions
- Heat a heavy-bottomed pot over medium heat. Add the bacon and cook for 5 to 8 minutes, or until golden brown and crispy. Remove the bacon from the pot and place it on a plate lined with paper towels to drain excess oil.
- In the same pot, add the onions and carrots. Stir constantly and cook until the onions are slightly browned and translucent. Add the flour and continue stirring until well blended. Pour in the milk and water, and bring the mixture to a boil. Cook and stir the soup for 2 to 3 minutes, or until it thickens and achieves a smooth consistency.
- Add the potatoes, corn, chicken bouillon, and white pepper. Reduce the heat to low and let the soup simmer, uncovered, for 20 minutes, or until the potatoes are tender.
- Melt the cheese into the soup and add the ham. Stir well, then top with the crisp bacon. Serve immediately, garnished with freshly chopped parsley or green onion if desired.
