Cheesy Italian Chicken and Rice Casserole

Ingredients

  • 1 14.5 oz can petite diced tomatoes
  • 1/4 tsp dried basil leaves
  • 1/2 tsp dried oregano
  • 1 tsp dried parsley flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp extra virgin olive oil
  • 1/2 c. chopped yellow onion
  • 3 cloves garlic minced
  • 2 c. instant brown rice
  • 1 c. low sodium chicken broth
  • 1 lb boneless skinless chicken breasts
  • Provolone cheese
  • chopped fresh parsley

Instructions

  1. Preheat oven to 350 degrees. 
  2. Lightly grease a 9x13 in. baking dish with cooking spray and set aside. 
  3. Combine tomatoes, basil, oregano, parsley flakes, salt, pepper, olive oil, onion, garlic, brown rice and chicken broth in baking dish.
  4. Place chicken on top of rice mixture. Try to nestle the chicken in the rice mixture. 
  5. Baked for 40 minutes or until chicken reaches an internal temp of 165F degrees.
  6. Remove from oven, place cheese slices on top of chicken and return to the oven for 4-5 minutes, or until cheese is melted. 
  7. Remove from oven, sprinkle with fresh parsley and serve.
