Cheesy Jacket Sweet Potatoes

Jacket sweet potatoes stuffed with Camembert and green onions are a comforting, delicious way to enjoy baked sweet potatoes with cheese.

Ingredients

  • 2 medium sweet potatoes Note 1
  • 1 tablespoon olive oil
  • 6 thick slices camembert
  • 2-3 green onions
  • 1 tablespoon butter
  • Fine sea salt and ground black pepper
  • ome parsley

Instructions

  1. Prepare sweet potatoes: Preheat the oven to 400°F/ 200°C. Wash and dry the sweet potatoes and prick them all over with a fork. Rub them with the oil, sprinkle with some salt and pepper, and place them on a baking sheet lined with parchment paper. 2 medium sweet potatoes + 1 tablespoon olive oil + fine sea salt and ground black pepper
  2. Bake them for about 40-45 minutes or until cooked through. It might take a shorter or longer time to have them ready, it really depends on their size.
  3. Prepare stuffing ingredients: In the meantime, slice the cheese and chop the green onions thinly.6 thick slices Camembert + 2-3 green onions
  4. Stuff sweet potato jackets: Split the potatoes lengthwise in the middle. Carefully scoop out some of the flesh, as much of it as you can without hurting their exterior; mix this with the butter and half of the green onions and stuff it back in the potatoes.1 tablespoon butter
  5. Top and bake: Arrange the cheese slices on top, sprinkle with some more freshly ground black pepper and bake for another 5 minutes or until the Camembert starts to melt.
  6. Serve: Scatter the remaining green onions on top, add some chopped parsley, and serve with salad.some parsley

Notes

  • Size: Make sure the sweet potatoes are the same size so they are both cooked simultaneously.
