Ingredients

  • 1/4 cup unsalted butter 1/2 stick
  • 2 medium sweet onions, thinly sliced
  • 6 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 bunch kale, rinsed and dried
  • 8 cups day-old sourdough bread* about 1 larger loaf
  • 1 cup finely grated Gruyère cheese about 6 oz.
  • 3-4 cups vegetable or chicken stock

Notes

  • * any large loaf of country-style bread will work well in this recipe. My favourites are sourdough, French Bread, or a hearty multigrain.
