Cheesy Mashed Potatoes

Cheesy mashed potatoes are loaded with cream cheese and cheddar cheese for a great side dish. They are baked to perfection.

Ingredients

  • 3 lbs Russet potatoes
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 cup sour cream
  • 8 oz cream cheese cut into small pieces
  • 2 cups cheddar cheese Shredded
  • 1/2 cup chives Optional for Topping

Instructions

  1. Clean and peel the potatoes. Then quarter them.
  2. Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork tender.
  3. Drain the potatoes and then return them back to the pot.
  4. Then add in the butter, milk, salt, pepper, sour cream and cream cheese. Use an electric mixer to blend the potatoes until they are light and fluffy.
  5. Preheat the oven to 350 degrees F.
  6. Place the mashed potatoes in a 9X9 baking pan then top it with the shredded cheddar cheese.
  7. Cover with foil and bake for 10-15 minutes until the cheese is completely melted.
  8. Top with the chives if you prefer.
  9. Serve immediately while warm and enjoy!
