Cheesy Mushroom Pinwheels

Ingredients

  • cooking spray
  • 2 cups minced mushrooms (about 6 ounces) finely chopped
  • ½ cup green onion chopped
  • 1 tablespoon butter
  • 8 ounces cream cheese room temperature
  • ¼ teaspoon salt
  • 1 refrigerated pizza crust (thin crust preferred)
  • 1 egg
  • 1 tablespoon water
  • 2 teaspoons poppy seeds

Instructions

  1. Preheat the oven to 400 degrees. Spray a baking sheet with cooking spray and set aside.
  2. Cook the mushroom and green onions in butter until softened. Set them aside to cool for a few minutes.
  3. In a medium bowl, combine the cooked mushrooms and green onions with the softened cream cheese and salt.
  4. Roll out the pizza crust. Evenly spread the dough with the cream cheese mixture.
  5. Roll the filling and pizza crust together from the long side.
  6. Use a sharp knife to cut into about 1-inch slices.
  7. Put the slices on the prepared baking sheet.
  8. Combine the egg with water in a small bowl and brush over the top of each slice.
  9. Sprinkle with poppy seeds.
  10. Pop the baking sheet in the oven and cook until golden brown, about 10-12 minutes.
  11. Remove to a cooling rack. Serve warm or at room temperature.

Notes

  • May be made two to three days in advance and stored, well covered, in the refrigerator. Bring to room temperature before serving, or heat briefly in a 350 degree oven and serve warm.
  • Cream cheese should be at room temperature for best results.

  • To freeze, cool completely, transfer to a freezer-safe container and freeze for up to one month. Thaw overnight in the refrigerator before serving either at room temperature or rewarmed.
