Cheesy Oven Baked Western

This Cheesy Oven Baked Western is a favorite for breakfast or even dinner!  Full of ham, onions, peppers, cheese and surrounded by egg! Total perfection!

Ingredients

  • 6 large egg
  • ¼ cup heavy cream 35 %
  • ¼ cup milk 2 %
  • 2 tblsp sour cream
  • ½ cup onion medium, diced
  • 2 tblsp butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground mustard
  • 1 ¼ cup ham leftover, cooked, cubed, divided
  • 2 cups cheese shredded, to taste, divided
  • 2 green onion thinly sliced
  • 1 medium pepper any color, diced, optional

Instructions

  1. Preheat the oven to 350 degrees. Prepare an oven safe dish with butter or cooking spray. Set aside.
  2. In a small skillet, on medium heat, melt the butter and saute the onion until softened. 
  3. In a medium sized bowl whisk together the eggs, milk and/or cream, sour cream salt, pepper and ground mustard.
  4. Pour ½ of the egg mixture into your prepared dish. Sprinkle evenly with the sautéed onions, peppers (if using) and 1 cup of the diced ham. Top with 1 cup of shredded cheese. Pour the remaining egg mixture on top.
  5. Bake for 55 minutes then sprinkle with the remaining 1 cup of shredded cheese, ¼ cup of ham and chopped green onions. Continue to bake for another 5-10 minutes until the center is set when gently shaken or a toothpick comes out clean. Broil until the cheese is nicely browned. Allow to rest for 5 minutes then serve.  Enjoy!
