Ingredients
- 1 cup Bob’s Red Mill Farro (uncooked)
- ½ cup Parmesan Cheese (grated)
- ¼ cup pesto (homemade or store bought)
- 1 tablespoon extra virgin olive oil
- 1 clove garlic (minced)
- salt and pepper to taste
- toasted pine nuts and parsley (optional garnish)
Instructions
- Prepare farro according to package instructions. Strain any excess liquid and return to the same pan.
- Stir in the parmesan cheese, pesto, olive oil and garlic to the cooked farro. Heat on low until cheese melts and farro is warmed through. Season with salt and pepper to taste before serving.
- Garnish with toasted pine nuts and parsley if you wish.
