Cheesy Potato Casserole

Ingredients

  • 30 oz frozen shredded hashbrowns
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup milk
  • ½ onion chopped
  • 2 cups cheddar cheese shredded
  • 8 oz sour cream

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13 pan with nonstick spray.
  3. Break the frozen hash browns up in the bag.
  4. In a large bowl combine the onion, 1 cup of cheese, milk, cream of chicken soup and sour cream. Stir to combine.
  5. Mix in the hasbhrowns and stir to coat.
  6. Pour into a 9x13 pan. Top with the remaining cheese.
  7. Cover with foil and bake in the preheated oven for 45-50 minutes.
  8. Remove the foil and bake for 5-10 minutes to brown the the cheese is slightly.

Notes

  • This casserole can be assembled before hand, covered and store in the refrigerator for 3-4 days.  Then bake according to the recipe. 
  • *Leftovers can be stored in the refrigerator for up to 5-7 days.
