Cheesy Potato Casserole

Scalloped potatoes smothered in cream of chicken, sour cream, and lots of cheddar cheese. Baked to perfection with caramelized onions to top it all!

Ingredients

  • 4 medium potatoes - peeled
  • 1 tablespoon salt
  • 1 can (10.5oz) cream of chicken
  • 1 cup sour cream
  • 1 stick butter
  • 4 big onions - coarsely chopped
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  1. Place potatoes in a pot and pour enough water to cover the surface. Add 1 Tablespoon salt and boil for 15 minutes to soften them. Drain water. Once cold enough to handle, cut potatoes in very thin slices and place in a large bowl.
  2. In a separate bowl, mix together the cream of chicken, sour cream and ¼ cup cheddar cheese. Season with salt and pepper. Pour half of this mixture to the potatoes and toss to coat each slice completely. 
  3. Arranged the potato slices in a baking dish. Pour the remaining mixture on top. Cover with foil and bake at 180°C for 20-30 minutes or until potatoes are almost cooked through.
  4. Add the remaining cheddar cheese on top and bake uncovered for another 10-15 minutes or until cheese melts.
  5. In a skillet, melt butter over medium heat. Add chopped onions and cook until caramelized, about 12-15 minutes.
  6. Top the cheese potato with the caramelized onions and serve.
