Cheesy Prosciutto Pastry Bites

Ingredients

  • 400 g (14oz) Puff pastry sheets thawed
  • 150 g (5oz) prosciutto
  • 2 cups grated cheese gruyere, mozzarella, fontina, cheddar. Even brie will be delicious.
  • 1 egg
  • fresh thyme optional

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Spray a 12-hole muffin pan with non-stick cooking spray or olive oil spray.
  3. Slice the puff pastry into 12 squares and push a piece of pastry into each hollow in the muffin pan.
  4. Add a piece of prosciutto to each pastry then add grated cheese.
  5. Add a few sprigs of fresh thyme.
  6. Beat the egg with a tablespoon of water then brush the edges of the pastry with the egg wash.
  7. Place the pastries in a preheated oven and allow to bake for 15-20 minutes or until they are golden brown and puffed. 
  8. Remove from the oven and allow to cool for a minute then gently remove them from the pan and serve.
