Ingredients

  • 2 tablespoons butter unsalted
  • 1 yellow onion , diced
  • 4 pounds russet potato peeled and cut into 1/4 inch cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 cup ranch dressing
  • 2 cups cheddar cheese , shredded

Instructions

  1. Preheat oven to 400 degrees.
  2. Add the butter to a large skillet with the onions on medium-high heat and cook for 4-5 minutes until softened.
  3. To a large bowl add the onions, potatoes, salt, pepper, and ranch dressing and mix well then put into a 9x13 baking dish.
  4. Cover with foil and bake for 60 minutes, then remove the foil, stir in the cheese, and let cook an additional 10-15 minutes until cheese is melted and slightly browned.
