Ingredients

  • 3 lices thick-cut bacon diced
  • 24 oz (680g / 1 bag) mini gold potatoes cut into halves
  • 3 cloves garlic minced
  • salt to taste
  • freshly ground black pepper to taste
  • 2 talks green onion chopped
  • 1 cup sharp cheddar cheese shredded

Instructions

  1. Heat a pan over medium-high heat. Cook the bacon until crisp. Using a slotted spoon, transfer the bacon to a plate lined with paper towels.
  2. Reduce the heat to medium. Add the potatoes and garlic to the same pan used to cook the bacon. Season with salt and pepper, then cover with a lid. Cook for approximately 15 minutes, or until the potatoes are golden and tender, stirring every few minutes to ensure even cooking.
  3. Transfer the potatoes to a bowl and add the bacon, green onions, and cheese. Mix well and serve immediately.

Notes

  • Chives can be used in place of green onions. You can also use extra cheese for a more decadent dish.
