Cheesy Sautéed Garlic Spinach

Cheesy Sautéed Garlic Spinach or fried spinach with feta, goat, bleu or cheddar, is so easy! This sauteed spinach with cheese recipe can include bacon too!

Ingredients

  • 1 ½ pounds spinach
  • ¼ cup olive or another vegetable oil
  • ¼-1/2 cup feta, bleu or goat cheese, cubed or crumbled more or less to taste
  • 1-3 tablespoons garlic, sliced or minced more or less to taste
Options
  • 1 onion, diced or sliced
  • ½ pound bacon, cooked and crumbled
  • reserved bacon grease
  • ½ - 1 teaspoon crushed red pepper flakes

  1. Remove the coarse stems, wash and drain your spinach.
WITH Bacon

  1. In a large skillet cook your bacon until crispy. Set aside on a paper towel. 
  2. Remove a lot of the remaining bacon grease in your skillet. I usually tip the pan to the side and carefully absorb some of the grease into a ball of paper towel.
  3. Heat your skillet with bacon grease over medium heat.
WITHOUT Bacon
  1. Place your oil in a skillet or wok over medium to medium-high heat until it shimmers or a drop of water flicks and dances.
The Recipe
  1. Add the onion, stir to cook until the onions are tender, about 5 minutes. If you are using regular spinach, add it right now with your onions.
  2. Place bacon pieces back into your skillet.
  3. Add crushed red pepper flakes, if using, garlic, salt and pepper and stir. Reduce heat if the garlic starts to turn brown. Stir constantly.
  4. Add baby spinach, if using, and cook until it starts to wilt; less than a minute. Exact cooking time will be determined by the heat and type of spinach you're using.
  5. Remove spinach from skillet or wok and place on serving plate.
  6. Sprinkle immediately with cheese of your choice.
  7. Serve immediately. Enjoy!
