Cheesy Shakshuka

Ingredients

  • 1 tsp olive oil
  • 1/2 big onion chopped
  • 1 red bell pepper chopped
  • 1 can diced tomatoes
  • 1/2 tsp Turmeric
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 eggs
  • 1/4 cup shredded mozzarella
  • 1/4 cup shredded Parmesan

Instructions

  1. Heat olive oil in a pan on medium heat.
  2. Saute onion for 5 minutes until translucent.
  3. Add chopped bell pepper and saute for 3 more minutes.
  4. Add diced tomatoes and spices. Let it cook until thickens and excess water evaporates.
  5. Break the eggs into the pan and cover for 2-3 minutes until eggs are cooked but have runny yolks.
  6. Sprinkle Mozzarella and Parmesan on top and let the cheese melt.
  7. Garnish with parsley and serve immediately with toasted bread.
