Cheesy Taco Meatballs

Cheesy Taco Meatballs are great as an easy appetizer recipe, or add them to tortillas for a fun twist on tacos! They're also low carb & gluten free!

Ingredients

  • 2 lbs pork sausage
  • 8 oz cream cheese softened & cubed
  • 1 cup cheddar cheese shredded
  • 4 oz diced green chilies
  • ¼ cup taco seasoning click link for homemade recipe
  • 12 oz hot sauce

Instructions

  1. Combine the sausage, cream cheese, cheddar cheese, green chilies and taco seasoning in a large bowl.
  2. Form into 18-20 balls.
  3. Place a large skillet or dutch oven on the stove over medium heat.
  4. Add the meatballs to the skillet and brown on all sides for 2-3 minutes.
  5. Once the meatballs are browned, pour the hot sauce over the balls.
  6. Cover, reduce heat to low and simmer for 15-20 minutes.

Notes

  • Mild or hot pork sausage can be used. I used 1 lb mild and 1 lb hot to make these meatballs slightly spicy.
  • The spice of the meatballs will be determined by both the sausage and hot sauce you use. Feel free to adjust the level of spiciness to your liking. I used Pico Pica Hot Sauce for this recipe, as it's a family favorite!
  • To make these taco meatballs vegetarian, substitute 2 lbs soyrizo for the pork sausage.
