Ingredients

  • 1 onion diced
  • 2 tbsp olive oil ghee, or clarified butter
  • 2 Russet potatoes washed well and diced into 1" squares
  • 1 zucchini washed well and diced into 1" squares
  • 1 bell pepper halved and diced
  • ½ cup sharp cheddar cheese
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ cup green onions

Instructions

  1. In a large cast iron skillet, melt butter or heat oil until shimmery.
  2. Add onions and cook until browned.
  3. Set aside.
  4. Add potatoes, cook on medium high until browned.
  5. Remove potatoes.
  6. Add zucchini and bell pepper and cook on medium high until browned.
  7. Add onions and potatoes back to pan, stir.
  8. Add salt and pepper to taste, and top with cheese and green onions.
  9. When cheese is melted, remove from heat and serve!
