Cherry Chocolate Oatmeal Cups
Description
This recipe uses ripe mashed bananas as a natural sweetener and binder combined with rolled oats for texture and chewiness. The addition of almond or vanilla-flavored cow's milk adds moisture and flavor, while eggs provide structure. Baking powder helps the cups rise slightly during baking.

Ingredients
- 3 banana ripe, mashed
- 1 cup almond milk or cows milk, vanilla
- 2 egg
- 1 tablespoon baking powder
- 3 cups rolled oats aka old fashioned oats
- 1 tsp vanilla extract
- 1 cup Cherry chopped
- ¼ cup chocolate chips
Instructions
- Preheat oven to 375 degrees and prepare muffin pan with non-stick cooking spray (spray the baking liners if you are using them)
- In a large bowl, mash bananas. Add all ingredients, except the cherries and chocolate chips. Mix with a spoon.
- Fold in the cherries and chocolate chips into the batter.
- Add batter to muffin cups (about 1/4 cup of the batter)
- Bake 20-30 minutes or until lightly browned and firm to the touch
- Cool and enjoy! Keep refrigerated in a airtight container.
Notes
- You can use gluten-free oats as a substitute if needed for dietary preferences or allergies.
