Cherry Chocolate Oatmeal Cups

Cherry Chocolate Oatmeal Cups are made by combining mashed ripe bananas, oats, almond or cow's milk, eggs, baking powder, vanilla extract, chopped cherries, and chocolate chips. The batter is baked in muffin cups until lightly browned and set, producing moist, chewy cups with bursts of cherry and chocolate. These cups are a wholesome snack or breakfast option that can be refrigerated for convenience.

Description

This recipe uses ripe mashed bananas as a natural sweetener and binder combined with rolled oats for texture and chewiness. The addition of almond or vanilla-flavored cow's milk adds moisture and flavor, while eggs provide structure. Baking powder helps the cups rise slightly during baking.

Chopped cherries contribute a tart and fruity note, contrasting with the sweetness of chocolate chips folded into the batter. Baking the batter in muffin cups at 375°F until browned and firm creates individual portions easy to grab and eat.

The cups can be served chilled or at room temperature as a convenient breakfast or snack. They offer a balance of fruit, whole grains, and a touch of chocolate. Refrigerate leftovers in an airtight container to maintain freshness.
