Ingredients

Cherry Filling
  • 4 heaping cups cherries I used a frozen blend of tart and sweet cherries, frozen
  • 2 Tablespoons lemon juice fresh
  • 2 Tablespoons arrowroot powder cornstarch also works
  • ¼ teaspoon almond extract
Topping
  • 1 ½ cup rolled oats old fashioned
  • ½ cup almonds slivered, raw
  • ½ cup almond flour
  • ½ cup maple syrup
  • 3 Tablespoons coconut oil melted
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon almond extract
  • ¼ teaspoon salt sea salt

Instructions

    Cup of Yum
  1. Preheat oven to 350F and spray an 8-inch square baking dish with cooking spray.
  2. Add frozen cherries, lemon juice, almond extract and arrowroot powder to a saucepan over medium heat.
  3. Bring to a boil then reduce heat to medium low and simmer for 7-10 minutes, stirring and pressing down with a wooden spoon or spatula occasionally to break down the cherries. You want your cherry mixture to thicken up slightly so it coats the back of a spoon without being too drippy.
  4. While cherries are simmering, make your topping. In a medium bowl, stir together oats, almonds, almond flour, maple syrup, coconut oil, vanilla, cinnamon, almond extract and sea salt. Set aside.
  5. Carefully pour cherry mixture into the prepared baking dish. Spoon oatmeal almond topping over the cherries in an even layer.
  6. Bake for 30-35 minutes or until the fruit is bubbling and topping is golden brown.
  7. Let cool for 15-20 minutes then serve warm with vanilla ice cream or whipped topping.

Notes

  • apple crisp
  • peach crisp
  • blueberry crumble
  •
  • Storage: Store leftovers at room temperature for up to 2 days or in the fridge for up to 5 days. Freezing isn’t recommended, as the topping may lose its texture. For reheating, use the oven or toaster oven to keep the topping crisp, as the microwave can make it soggy.
  • Substitutions: If you’d like to swap the cherries with another fruit a mix of berries or pears would be a good substitute. You could also make this apple crisp, peach crisp or blueberry crumble instead!
