Cherry crumble from oat and chestnut flour

Easy to make crumble with oat and chestnut flour. No eggs, dairy or oil needed: so not only glutenfree but fatfree and vegan as well. Naturally sweetened with maple syrup and coconut flower sugar. Enhanced with the comforting aroma of cinnamon.

Ingredients

  • 2 cups cherries (250 grams)
  • ½ cup gf oatmeal, cut or quick oats (50 grams)
  • ⅛ cup gf oat flour (15 grams)
  • ½ cup chestnut flour (50 grams)
  • ⅛ cup chestnut flour (12,5 - 15 grams)
  • ¼ cup coconut flower sugar (30 grams)
  • 2 tbsp coconut flower sugar
  • 4 tbsp maple syrup
  • 2 tbsp maple syrup
  • 2 teaspoons cinnamon
  • celtic sea salt to taste

Instructions

  1. Preheat the oven to 360F or 180C.
  2. Pit the cherries and cut them in half. You can use potted or frozen (and thawed) cherries as well.
  3. Place all the ingredients for the crumble in a bowl and mix with a fork (or by hand) into crumbles.
  4. Mix the cherries with both flours, the sugar and the maple syrup.
  5. Place the cherriy mixture in the baking dish.
  6. Crumble the crumble on top.
  7. Place in the oven for 30 minutes.
