Cherry Fluff Salad

This 'salad' can be served frozen or with a spoon for a sweet treat anytime!

Ingredients

  • 1 cup sweetened condensed milk
  • 2 tablespoons fresh lemon juice
  • 28 ounces cherry pie filling 1 can
  • 16 ounces crushed pineapple drained, 2 cans
  • 1 cup miniature marshmallows
  • 8 ounces whipped topping such as cool whip
  • ⅔ cup Chopped Pecans

Instructions

  1. In a large bowl, stir together sweetened condensed milk and lemon juice until fully combined.
  2. Add in the cherry pie filling.
  3. Fold the crushed pineapple, mini marshmallows, cool whip, and pecans into the cherry mixture until fully incorporated.
  4. If freezing, spread the cherry salad into a 9x13 inch baking pan lined with parchment paper. If you'd like to eat this as a soft fluff, refrigerate at least 4 hours. Top with additional nuts for garnish if desired.
  5. Freeze for at least 5 to 6 hours or until firm.
  6. Once frozen, use the edges of the parchment to lift the salad out of the pan, then use a sharp knife to slice into squares.

Notes

  • This frozen dessert is firm but soft/silky and can be served as a fluff salad or frozen. Because it is sweet, we much prefer the flavor when it's frozen.
  • After 5-6 hours of freezing, you should be able to remove and slice this dessert immediately. If frozen longer, you may want to let it sit on the counter for 15 minutes or so to soften slightly before enjoying it.
  • Feel free to serve with whipped cream and maraschino cherries.
