Cherry Yogurt French Toast Cups

Ingredients

For cherry jam:
  • 12 ounces frozen pitted red cherries
  • 1/4 cup orange juice
  • 1/4 cup maple syrup
For French toast cups:
  • 4 large eggs whisked
  • 1 cup low fat milk
  • 1 6 ounce container Yoplait cherry orchard yogurt
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon kosher salt
  • 6 lices large whole grain bread about 4 cups
  • 1/2 cup sliced almonds

Instructions

For the cherry jam:
    Cup of Yum
  1. Add all ingredients to a medium-sized pot and simmer over medium heat.
  2. Cook for about 30 minutes or until cooked down and thick.
  3. Jam can be made the day before.
For French toast cups:
  1. Preheat the oven to 350 degrees F and spray a 12-count muffin tin with non-stick spray.
  2. In a large bowl add eggs, milk, yogurt, vanilla bean paste, almond extract, and kosher salt. Whisk to combine.
  3. Add in the bread and toss to coat. Let the mixture sit for about 5 minutes so the bread has time to soak in the milk.
  4. After resting stir in the almonds.
  5. Add bread mixture into the prepared muffin tin and fill each one about half full.
  6. Place about 1 tablespoon of the cherry jam on top of each cup and then top with the remaining bread mixture.
  7. Bake for about 35 minutes or until fully set.
