These cherry yogurt French toast cups are a delicious way to start your day. Made with cherry yogurt, almonds, and a quick cherry jam. You'll love the way they taste and love how easy they are to make.

Ingredients
For cherry jam:
- 12 ounces frozen pitted red cherries
- 1/4 cup orange juice
- 1/4 cup maple syrup
For French toast cups:
- 4 large eggs whisked
- 1 cup low fat milk
- 1 6 ounce container Yoplait cherry orchard yogurt
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon almond extract
- 1/2 teaspoon kosher salt
- 6 slices large whole grain bread about 4 cups
- 1/2 cup sliced almonds

Instructions
For the cherry jam:
- Add all ingredients to a medium-sized pot and simmer over medium heat.
- Cook for about 30 minutes or until cooked down and thick.
- Jam can be made the day before.
For French toast cups:
- Preheat the oven to 350 degrees F and spray a 12-count muffin tin with non-stick spray.
- In a large bowl add eggs, milk, yogurt, vanilla bean paste, almond extract, and kosher salt. Whisk to combine.
- Add in the bread and toss to coat. Let the mixture sit for about 5 minutes so the bread has time to soak in the milk.
- After resting stir in the almonds.
- Add bread mixture into the prepared muffin tin and fill each one about half full.
- Place about 1 tablespoon of the cherry jam on top of each cup and then top with the remaining bread mixture.
- Bake for about 35 minutes or until fully set.
