Chewy Chocolate Chip Gluten-Free Granola Bars

A speedy, portable, and nourishing snack made with real-food ingredients. This gluten-free chewy granola bar recipe contains mini chocolate chips and dried fruit for sweetness and comes with a nutty, indulgent flavor.

Ingredients

  • 2 cups crunchy almond granola room temperature or cooled
  • ½ dried cranberries
  • ¼ chocolate chips Enjoy Life
  • 2 eggs

Instructions

  1. Preheat the oven to 350 degrees.  Add the granola, cranberries & chocolate chips into a large bowl. Mix until combined. Whisk two eggs together and pour over granola mixture. Mix until all granola is coated.
  2. Line a baking pan with parchment paper. Pour bar mixture into an 8x4 pan and press bars down into the pan. Ensure they are fairly compacted.
  3. Put in the oven for 17-20 minutes. Remove from the oven and leave to cool in the pan for 15 minutes (this helps them firm up and stick together).
  4. Remove from the pan, cut into bars, wrap in parchment paper, and place in the fridge!
