Chewy Oatmeal Cookies

Ingredients

  • 1 cup butter softened, salted
  • 3/4 cup brown sugar tightly packed
  • 1/2 cup granulated sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats or rolled oats

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
  2. In the bowl of a stand mixer fitted with the paddle attachment, begin mixing together butter, brown sugar, and white sugar and mix on low speed. Increase to medium and continue mixing until smooth, about 1 minute.
  3. Add in the eggs and vanilla extract and mix until just combined, about 30 seconds.
  4. Add in the flour, cinnamon, baking powder, baking soda, and salt. Mix until well combined.
  5. Stir in the quick oats until fully incorporated.
  6. Scoop the dough into 2-inch balls and place them onto the prepared baking sheets, about 12 per pan. If desired, sprinkle a little bit of sugar on top of each ball of dough.
  7. Bake the cookies in the preheated oven for 10-12 minutes, until the tops are golden brown.
  8. Allow the cookies to cool on the pan for 15 minutes before serving warm, or transfer them to a wire rack to cool completely. Enjoy!

Notes

  • Bake for 10 minutes for chewier, softer cookies.
  • For a crispier texture, bake for 14 minutes.
