Chewy Oatmeal Cookies

Chewy Oatmeal Cookies combine softened butter, brown and granulated sugars, eggs, and vanilla with a mix of flour, cinnamon, baking powder, baking soda, salt, and oats. The result is tender yet chewy cookies with a warm spice background and satisfying oat texture. Baking time adjusts the chewiness or crispness based on preference.

Description

Starting with creamed butter and sugars provides a sweet and rich base. Eggs and vanilla bring moisture and flavor. Dry ingredients including flour and spices are mixed in along with quick or rolled oats to add body and texture. Rolled oats introduce more chew, while quick oats blend smoothly.

Portioning the dough into balls and baking at 350°F for 10 to 14 minutes allows control over texture; shorter baking yields chewier cookies, longer baking results in crisper edges and crunch. Cooling on the baking sheet slightly helps cookies set.

This versatile cookie suits those who enjoy the blend of cinnamon warmth and oat nuttiness, ideal paired with milk or as a portable snack.

Ingredients

Servings
  • 1 cup butter softened, salted
  • 3/4 cup brown sugar tightly packed
  • 1/2 cup granulated sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats or rolled oats

Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
  2. In the bowl of a stand mixer fitted with the paddle attachment, begin mixing together butter, brown sugar, and white sugar and mix on low speed. Increase to medium and continue mixing until smooth, about 1 minute.
  3. Add in the eggs and vanilla extract and mix until just combined, about 30 seconds.
  4. Add in the flour, cinnamon, baking powder, baking soda, and salt. Mix until well combined.
  5. Stir in the quick oats until fully incorporated.
  6. Scoop the dough into 2-inch balls and place them onto the prepared baking sheets, about 12 per pan. If desired, sprinkle a little bit of sugar on top of each ball of dough.
  7. Bake the cookies in the preheated oven for 10-12 minutes, until the tops are golden brown.
  8. Allow the cookies to cool on the pan for 15 minutes before serving warm, or transfer them to a wire rack to cool completely. Enjoy!

Notes

  • Bake for 10 minutes for chewier, softer cookies.
  • For a crispier texture, bake for 14 minutes.
