Chex Oven Fried Chicken (gluten free)
Crispy oven friend chicken using Chex as a coating, gluten free never tasted so good!
Ingredients
- 8 chicken thighs
- 1 1/2 cups rice chex cereal finely crushed
- 2 tablespoons Old Bay seasoning
- 2 large egg
- 1/3 cup margarine melted
Instructions
- Preheat your oven to 375 degrees Fahrenheit
- Place crushed Chex and seasoning in a bowl; combine.
- Whisk the eggs in a bowl.
- Dip each chicken thigh in the crumbs, then the egg mixture then back in the crumbs to fully coat.
- Place chicken thighs on a baking sheet.
- Drizzle the melted margarine over the top of the chicken thighs, coating each as much as you can.
- Place in the fridge for half a hour.
- Bake for 35-40 minutes at 375 degrees Fahrenheit until the chicken reaches a temperature of 185. (chicken thighs are better when cooked slightly longer!)
