Chex Oven Fried Chicken (gluten free)

Crispy oven friend chicken using Chex as a coating, gluten free never tasted so good!

Ingredients

  • 8 chicken thighs
  • 1 1/2 cups rice chex cereal finely crushed
  • 2 tablespoons Old Bay seasoning
  • 2 large egg
  • 1/3 cup margarine melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit
  2. Place crushed Chex and seasoning in a bowl; combine.
  3. Whisk the eggs in a bowl.
  4. Dip each chicken thigh in the crumbs, then the egg mixture then back in the crumbs to fully coat.
  5. Place chicken thighs on a baking sheet.
  6. Drizzle the melted margarine over the top of the chicken thighs, coating each as much as you can.
  7. Place in the fridge for half a hour.
  8. Bake for 35-40 minutes at 375 degrees Fahrenheit until the chicken reaches a temperature of 185. (chicken thighs are better when cooked slightly longer!)
