Chia Pudding Parfaits
Chia Pudding Parfaits are prepared by soaking chia seeds in a mix of vanilla-flavored Greek yogurt and milk overnight, forming a gelatinous pudding base. Ingredients
- 2 vanilla nonfat Greek yogurt or 2% Greek yogurt or Icelandic skyr, 5.3 oz containers
- 1 cup milk any type
- 3 tablespoons chia seeds
- 2 cups Blueberry assorted fresh berries like
- 2 cups raspberry
- 2 cups strawberry
- 2 cups blackberry
- ¼ cup granola
Instructions
- Whisk the yogurt (or skyr), milk and chia seeds together in a large bowl. Cover and refrigerate overnight until it forms into a pudding.
- When ready to assemble the parfaits, place about 1 cup of the berries in a bowl and mash them with a fork (or puree them in a mini food processor).
- To assemble the parfaits, place a layer of chia pudding in the bottom of a glass or mason jar and top it with a layer of berry puree and 1 tablespoon of granola. Repeat the layers. Top the parfaits with fresh berries.
Notes
- Prepare the chia pudding the night before to allow the seeds to fully absorb liquid and thicken.
- Add granola topping only right before serving to maintain its crunch.
- Vanilla yogurt adds natural sweetness; if using plain yogurt, consider adding a sweetener like maple syrup or honey.
- Customize flavors by swapping in tropical fruits, cocoa powder, or other toppings as desired.
