Chick-fil-A Chicken Tortilla Soup (Copycat Recipe)

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium white onion chopped
  • 2 cloves garlic minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 30 ounces canned cannellini beans pureed (2 cans)
  • 15 ounces canned cannellini beans drained and rinsed
  • 15 ounces canned diced tomatoes drained
  • 4 ounces canned green chilies
  • 15 ounces canned creamed corn
  • 15 ounces canned whole kernel corn
  • 15 ounces canned black beans
  • 1 whole rotisserie chicken shredded
  • tri-color tortilla strips for serving
  • lime juice for serving

Instructions

  1. Heat the oil in a medium or large stock pot over medium heat.
  2. Add the onions and garlic and sauté until the onions are translucent.
  3. Add the seasonings and stir.
  4. Add the remaining ingredients (except for the tortilla strips and lime juice) to the top and mix to combine. Reduce the heat to a simmer, cover, and cook for 30 to 45 minutes.
  5. Serve with tri-color tortilla strips and a squeeze of lime juice.

Notes

  • For the most authentic Chick-fil-A flavor, use a high-quality rotisserie chicken - the pre-seasoned meat adds depth that plain cooked chicken can't match. If you don't have a rotisserie chicken, poached chicken breast works well, but consider adding a teaspoon of poultry seasoning to compensate. The soup thickens considerably as it cools, so don't worry if it seems slightly thin when hot. For the best flavor development, make this soup a day ahead and reheat before serving.
  • Use a food processor to puree the cannellini beans for a creamy texture.
