Ingredients

  • 12 oz. Just Bare chicken nuggets or chicken of choice
  • 8 cups green leaf lettuce, chopped or greens of choice
  • 1 (11-oz.) can corn drained
  • 4 slices cooked bacon crumbled
  • 4 hard-boiled eggs store-bought or see notes for how to hard boil eggs
  • 1 cup grape tomatoes
  • 1/2 cup thick shredded cheese (56g) I used monterey jack and cheddar
  • Avocado Lime Dressing optional (or you can use store bought or dressing of choice)

Instructions

    Cup of Yum
  1. Preheat the air fryer to 375 degrees F.
  2. Once preheated, add nuggets and air fry for 8-10 minutes or until crisp.
  3. Add 1/4 of everything to four bowls, or store components separately and assemble when ready to eat.
  4. Serve with avocado lime dressing, or dressing of choice, and enjoy!

Notes

  • To make dairy-free: use dairy-free cheese and sub for dairy-free dressing (or use DF alternatives).
  • To store: store salads in fridge in an airtight container for 3-4 days. Store dressing separately. If I'm meal prepping these salads, I love using these little 2-oz cups with lids to store my dressing in individual portions. You can also store the components separately and assemble when ready to eat.
  • How To Hard-Boil Eggs:
  • Place eggs in a large saucepan. Cover them with cool water by 1 inch. Bring water to a boil (for easier to peel eggs, add 1/2 Tbsp salt and 1 Tbsp vinegar). Once at a rolling boil, set the timer for exactly 10 minutes (for perfect hard-boiled eggs) then remove from heat. Run eggs over cold water for a few minutes until all the hot water is gone and you’re left with the cold water. Let eggs sit in the cool water for 10 minutes until they reach room temperature.
