Ingredients

  • 1 pound chicken breast either two large or 4 small breasts, boneless skinless
  • 3/4 cup dill pickle juice
  • 2 egg large
  • 1/4 cup milk
  • 1 cup flour
  • 2 tbsp powdered sugar
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp celery salt
  • 1/2 tsp basil
  • 1 cup peanut oil , for frying
  • 4 Hamburger Bun
  • lettuce
  • tomato slices
  • pickle slices

Instructions

  1. Butterfly chicken into two thin filets. Score in diamonds.
  2. Marinate chicken in the pickle juice for an hour.
  3. Add milk and egg into a bowl, mix together.
  4. Mix together dry ingredients in a second bowl.
  5. Heat the oil in a skillet to about 350.
  6. Dredge each chicken piece into the egg, then into the flour mixture.
  7. Fry each chicken piece for 3-4 minutes on each side, or until browned and cooked through.
  8. Make into a sandwich with lettuce, tomato and pickles. Serve with delicious lemonade!

Notes

  • Marinate the chicken in dill pickle juice for at least one hour to enhance flavor and tenderness.
  • Score the butterflied chicken in a diamond pattern to help the seasoning and coating stick.
  • Use peanut oil for frying due to its high smoke point and neutral flavor.
