Chicken Adobo with Liver Spread

Ingredients

  • 1 tablespoon canola oil
  • 1 head garlic, peeled and minced
  • 3 pounds chicken, cut into serving parts
  • 1 cup vinegar
  • ½ cup soy sauce
  • 1 cup water
  • 2 bay leaves
  • salt and pepper to taste
  • ¼ cup liver spread

Instructions

  1. In a pot over medium heat, heat oil. Add garlic and cook until softened.
  2. Add chicken and cook, stirring occasionally, until lightly browned and juices run clear.
  3. Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes.
  4. Add soy sauce, water, and bay leaves. Continue to boil for about 2 to 3 minutes.
  5. Lower heat, cover and continue to cook for about 20 to 30 minutes or until chicken is cooked through and sauce is reduced.
  6. Season with salt and pepper to taste.
  7. Add liver spread and stir until well-dispersed. Cook for about 2 to 3 minutes or until sauce is thickened. Serve hot.

Notes

  • Allow the vinegar to boil, uncovered and without stirring for a good few minutes before adding the soy sauce and water to cook off the strong acid taste.
  • If potted liver pate is not available or you prefer a fresh alternative, boil about 1 cup of chicken livers until tender and fully cooked. Drain from liquid and mash with a fork or process in a blender until smooth. Use in the recipe as directed.
