Ingredients

  • 1 cooked and seasoned chicken breast
  • 2-3 small apples
  • 8 ounces spring lettuce mix
  • 1 tablespoon lemon juice
  • ⅓ cup roasted pecans
  • ⅓ cup dried cranberries
  • ¼ cup crumbled bleu cheese
Honey Dijon Vinaigrette
  • 1 clove garlic
  • 1 shallot
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 ½ teaspoons honey
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions

  1. Prepare the 1 cooked and seasoned chicken breast for the salad by chopping it into bite-sized pieces.
  2. Slice the 2-3 small apples into thin slices, and toss the slices with 1 tablespoon lemon juice.
  3. In a large bowl add the 8 ounces spring lettuce mix, chicken, apples, ⅓ cup roasted pecans, ⅓ cup dried cranberries, and ¼ cup crumbled bleu cheese.
Honey Dijon Vinaigrette

  1. Finely mince the 1 clove garlic and 1 shallot and add them to a bowl.
  2. To the same bowl add the ½ cup olive oil, ¼ cup balsamic vinegar, 1 ½ teaspoons honey, 1 teaspoon Dijon mustard, and salt and pepper to taste, and whisk to mix well.
  3. Pour the dressing over the salad, toss the salad to mix well and enjoy!
