Chicken and Broccoli Stir-Fry

Ingredients

  • 1 pound boneless skinless chicken breast cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 4 cups broccoli florets
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced

  1. In a small bowl, whisk together soy sauce, water, cornstarch, and sesame oil to create the sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces to the skillet and cook until lightly browned and nearly cooked through, about 5 to 7 minutes.
  3. Add garlic and ginger, and sauté for about 30 seconds to 1 minute or until fragrant.
  4. Add broccoli florets to the skillet, pour the sauce over the chicken and broccoli, and stir to combine. Cover and let simmer for about 5 minutes, or until the broccoli is tender and the chicken is fully cooked.
  5. Serve hot, ideally over a bed of steamed rice or noodles.
