Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken breasts cut into 1-inch pieces
  • 2 cups fresh green beans trimmed
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

  1. Heat oil in a large skillet over medium-high heat. Add chicken pieces and stir-fry until lightly browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add green beans and stir-fry for about 4 minutes. Add garlic and ginger, and cook for an additional minute, until fragrant.
  3. Return the chicken to the skillet. Mix soy sauce, oyster sauce, rice vinegar, and sugar in a small bowl and pour over the chicken and green beans. Stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce has thickened.
