Ingredients

  • 1 pound boneless pork shoulder cut into 2-inch cubes
  • 1 pound chicken thighs bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic peeled and smashed
  • 2 tablespoons vegetable oil
  • 1 large onion sliced
  • 1 cup water
  • 3 bay leaves
  • 1 teaspoon whole black peppercorns
  • salt to taste

  1. In a large bowl, combine the pork, chicken, soy sauce, vinegar, and garlic. Marinate for at least 30 minutes, or overnight for a deeper flavor.
  2. In a large pot, heat the oil over medium heat. Add the onions and cook until translucent. Add the marinated meat (with the marinade), water, bay leaves, and peppercorns. Bring to a boil.
  3. Reduce the heat to low and simmer, covered, for about an hour, or until meat is tender. Season with salt to taste, and remove the bay leaves before serving.
